Cheesy, gooey chicken

Hi all!

Thought I’d share another recipe today.  I made this recipe last week and although it is very different from my usual fare, it was wonderful.  I halved it because there were only 4 of us, but the full recipe serves 6.  I used rice pasta, which was perfect with it. 

Saucy Garlic Chicken

Ingredients
4 whole garlic bulbs
2 Tbsp olive oil, divided
1 pkg (9 oz) fresh baby spinach
¾ tsp salt, divided
½ tsp pepper, divided
6 boneless skinless chicken breast halves (6 oz each)
6 Tbsp butter, cubed
6 Tbsp all-purpose flour
3 cups milk
2 ½ cups grated Parmesan cheese, divided
1/8 tsp nutmeg
Hot cooked pasta
Chopped tomato and minced fresh parsley, optional

Look at that cheesy, gooey sauce.. mmm!
2 bulbs of garlic... wow.  And that is when you halve the recipe. Definitely a must for date night :)


1.      Remove papery outer skin from garlic (don’t peel or separate cloves). Cut tops off bulbs; brush with 1 Tbsp oil.  Wrap in foil and bake at 425o for 30-35 minutes or until soft.  Cool for 10-15 minutes.

2.      Place spinach in greased 13x9 inch baking dish; sprinkle with ¼ tsp each of salt and pepper.  In large skillet, brown chicken in remaining oil and place over spinach.

3.      In large saucepan, melt butter. Stir in flour until smooth and add milk slowly.  Bring to boil; cook and stir for 1-2 minutes or until thick.  Stir in 2 cups of cheese, nutmeg, and remaining salt and pepper.  Transfer to blender, squeeze softened garlic into mixture and process until smooth.  Pour mixture over chicken.

4.      Cover and bake for 30-35 minutes or until 170o.  Uncover, sprinkle with remaining cheese and bake 5 minutes longer.  Serve with pasta, tomato and parsley, if desired.
